Talented chef Paul Webbe is the owner of three highly successful restaurants in East Sussex — The Wild Mushroom in Westfield, Webbe’s Rock-a-nore in Hastings and the Webbe’s at the Fish Cafe in Rye.

He also runs the very popular cookery school based in Rye and it was here that Paul was up to his elbows in the prized shellfish during the last week of February at his annual Scallop School.

During seven solid days of shucking and searing scallops Paul taught some 200 students in four, hands-on, cookery days and two demonstration days. Recipes were mainly modern British with additional influences from China and India.

To capture all the action, Paul once again turned to alexandrapatrick. He said: “Teaching people how to properly cook and fully appreciate our wonderful Rye Bay scallops is a real privilege for me. We wanted to make sure we got some great shots of our students making the most of what’s on our doorstep during the scallop festival. Duncan Callow has delivered just what we were looking for.”
